How to cure February-itis

The relentless winter darkness needn’t extend to the kitchen – or your dinner plate – and our regular writer Georgina Hayden knows the dishes to banish the blues. Yes, it’s time to bring out your inner child

RECIPES, STYLING AND FOOD STYLING GEORGINA HAYDEN PHOTOGRAPHS LAURA EDWARDS

„Instead of being crushed by the slog of February (will it ever end?) I like to inject a bit of fun into my cooking. Going out feels like a bit of a faff, it’s so cold, and the purse feels pinched from the festive season, so instead I channel my inner child and cook retro-style dishes that bring a smile to everyone’s face – including mine!

Spaghetti hoops on toast has become a go-to dish in our house when all we want to do is curl up on the sofa with a good film and a brew. It’s such a joyful recipe and is much loved by my baby and husband. The beef pies are my take on Fray Bentos pies and you can easily scale them up or freeze them.

My version of ham and pineapple is fantastic for when you have people over – it’s impressive and packed with flavour.

Finally, my little rhubarb jellies look unassuming but they’re like sweet explosions in your mouth, and when combined with the Bird’s custard ice cream they’re a flavour blast from the past. I hope these recipes will bring you as much joy in winter as they do for me. ”
