“When I won MasterChef back in 2005 I suddenly got flustered about what I was going to cook for my friends when they came round. I thought everyone would expect me to serve up chi-chi, cheffy food. The pressure was building that I would have to perform rather than just cook for them. At the time I was living with a guy called Joseph Trivelli, who’s one of the head chefs at the River Café. He gave me a lecture and said: ‘Tommi, whatever you cook, you cook it with love; with so much love that it transforms the food you touch. So you can cook a roast chicken and it will be the most delicious roast chicken in the world.’ I took his words to heart.
