Of all the recipes I’ve created over the 50 years, this would stand alone as being the most popular – even now strangers still come up and tell me they always make it. The recipe was originally a combination of my mother’s and grandmother’s versions. Over the years it has also been used for countless weddings and other celebrations. To describe it, I would say it’s dark, moist, very rich and more fruit than cake. I sometimes ice it but not always, as it’s also very good served with a wedge of strong cheddar (as in Yorkshire).
