Zingy potato salad

Serves 4 | Prep 10 mins | Cook 15 mins | Calories 115 (per serving)

1 red onion, peeled, finely chopped 75g (2¾oz) frozen peas 3 tbsp chopped coriander 400g (14oz) new potatoes, boiled, chopped 3 tbsp Greek yoghurt salt and freshly ground black pepper Geeta’s Premium Mango Chutney

1 Add the red onion, peas and coriander to the cooked new potatoes.

2 Add the Greek yoghurt, salt and pepper to taste and mix thoroughly.

3 Add a couple of dollops of Geeta’s Premium Mango Chutney on top and serve. This is delicious on its own or as a side for a summer barbecue.

Peach salad

Serves 4 | Prep 10 mins | Cook none | Calories 309 (per serving)

250g (9oz) rocket salad 4 peaches 100g (3½oz) vegan cheese, chopped into 4 pieces 3 tbsp lemon juice 1 tbsp date syrup 3 tbsp mild extra-virgin olive oil a pinch of sea salt freshly cracked white pepper, to taste 50g (2oz) chopped almonds or hazelnuts

1 Wash and dry the salad. Wash, dry and slice the peaches.

2 Place the salad leaves and peaches on a plate, then place a lump of cheese in the middle. Repeat with the other 3 plates.

3 Mix the lemon juice, date syrup, oil, salt and pepper until combined, then pour over the salad and decorate with chopped almonds or hazelnuts.
