For the salted butter toffee tart

Turmeric cookies

Makes 8-9 | Prep 15 mins | Cook 12-15 mins | Calories 261 (per cookie)

150g (5½oz) ground almonds

1 tsp turmeric

1 tsp cinnamon

½ tsp bicarbonate of soda

50g (1¾oz) coconut sugar

1 free-range egg

150ml (5½floz) olive oil

Salt and freshly ground black pepper

1 Preheat the oven to 200ºC/Gas Mark 6 and grease a baking tray.

2 In a large bowl, mix together the almonds, turmeric, cinnamon, bicarbonate of soda and coconut sugar.

3 Add the olive oil and egg and stir until combined. Add a good pinch of black pepper and salt.

4 Divide the mixture into 8 or 9 (depending on how large you like your cookies!), roll them into balls using the palms of your hands, then place on the baking tray.

5 Flatten the balls into discs, then bake in the oven for 12-15 minutes until turning golden brown.

6 Allow to cool slightly before you remove them from the tray so they firm up.

7 They will keep for a few days in a biscuit tin, however they are best served warm and eaten within 1-2 days.

Double chocolate pistachio cupcakes

FOR THE CHOCOLATE CUPCAKES

150g (5½oz) almond flour

3½ heaped tbsp cacao powder

1½ tsp gluten-free baking powder

1 tsp bicarbonate of soda

½ tsp sea salt or Himalayan Pink Salt

3 chia flax eggs (mix 3 tbsp ground flaxseeds with 9 tbsp water, then sit in the fridge for 15 minutes to thicken-up)
