Irish stew


Serves 4 | Prep 25 mins | Cook 1 hr 30 mins | Calories 698 (per serving)

1kg (2lb 2oz) lamb neck fillet, on the bone, trimmed and cut into chunks

3 tbsp sunflower oil

4 small onions, peeled, cut into thin wedges

2 large carrots, peeled, sliced

2 tbsp cornflour

750ml (26fl oz) gluten-free lamb or beef stock

150ml (5fl oz) gluten-free dark beer

8 small waxy potatoes, peeled a bunch of chives, snipped

2 spring onions, sliced salt and freshly ground black pepper

1 Preheat the oven to 150°C/Gas Mark 2.

2 Season the lamb with plenty of salt and pepper. Heat the oil in a casserole dish set over a moderate heat until hot.
