Turkey croque madame

Serves 3 | Prep 15 mins | Cook 20 mins | Calories 791 (per serving)

2 thyme sprigs

3 free-range eggs

10g (½oz) unsalted butter

20g (¾oz) gf plain flour

200ml (7fl oz) whole milk

6 slices of gluten-free white bread

2 tbsp Dijon mustard

100g (3½oz) Wensleydale cheese (with cranberry)

100g (3½oz) gruyère cheese

1 jar of KellyBronze hot cranberry jelly

400g (14oz) leftover KellyBronze cooked turkey

1 Preheat the oven to 180ºC/Gas Mark 4.

2 For the bechemel sauce, add the butter and thyme leaves to a saucepan on a low heat. When the butter has melted, stir in the flour and leave to cook for two minutes. Add the milk and whisk until smooth. Increase the heat and leave to simmer for a few minutes until the sauce has thickened.

3 Remove the pan from the heat and add the mustard and Wensleydale. Return back to the heat for 30 seconds until the cheese has melted.

4 Slice the bread into six 1.5cm (¾in) thick slices. Spread the cranberry sauce onto three slices, then add the bechamel sauce and grate on some gruyere cheese. Add the turkey, some more gruyère, then sandwich together with the remaining slices. On the top of the sandwich, add a little more béchamel and a sprinkle of gruyère, then bake in the oven until the cheese has melted and is golden brown in colour.

5 Meanwhile, fry the eggs in the butter until the whites are cooked, but the yolks are still runny.

6 Remove the sandwiches from the oven when golden brown, and place one egg on top of each before serving.
