Serves 12 | Prep 25 mins plus chilling | Cook 1 hr | Calories 355 (per serving)


225g (8oz) gluten-free plain flour mix, plus extra for dusting a pinch of salt ½ tsp xanthan gum 1 tbsp caster sugar ¼ tsp gluten-free baking powder 120g (4oz) unsalted butter, cold and cubed 2-3 tbsp iced water


425g (15oz) tinned pumpkin purée, unsweetened 3 large free-range eggs 100g (3½oz) caster sugar 50g (1¾oz) soft light brown sugar 2 tbsp cornflour, or arrowroot 1 tsp ground ginger 1 tsp ground cinnamon 1/8 tsp ground cloves ¼ tsp salt 100g (3½oz) crème fraîche


100g (3½oz) dark chocolate, finely chopped 100ml (3½floz) double cream a pinch of salt


4 gluten-free digestive biscuits, finely crushed

1 For the pastry: Combine the flour mix, salt, xanthan gum, sugar, baking powder and butter in a food processor. Pulse until the mixture resembles rough breadcrumbs.
