Planning nutritious meals for one while managing her type 2 diabetes

At 5ft 4in and just over 11st, Florence has recently been diagnosed with type 2 diabetes. Having lost her husband Albie three and a half years ago (they’d been together for 60 years), she has found her diet has become carb heavy. She used to cook fairly traditional meals, but now she’s cooking just for herself, Florence often relies on tea and toast or a jacket potato. Her diet doesn’t include much meat and only a little fish – usually baked salmon. Florence loves a sweet treat, but needs suggestions for choices that won’t affect her blood sugar. She’d also like simple meal-for-one ideas and dishes that will help keep her energy levels up.
