HOW TO GET THE BEST RESULTS

’Budget meat cuts are ideal for slow cooking – they become meltingly tender with little effort.’

This way of cooking comes into its own at this busy time of year. Follow Nichola Palmer’s top five tips for perfect dinners…

1 FOR MAXIMUM FLAVOUR, brown the meat and veg well first.

2 LIQUID WON’T EVAPORATE, so if adapting a favourite recipe for a slow cooker use about a third less liquid.

3 DON’T LIFT THE LID too often as heat will be lost.

4 RINSE RICE thoroughly before adding it to the slow cooker, to remove excess starch (otherwise it will be sticky).

5 IF YOU WANT TO THICKEN a sauce, stir in a little cornflour mixed to a paste with cold water and cook until thickened.

NO SLOW COOKER? All these recipes can be cooked in the oven at 170°C/fan 150°C/ gas 3 for 2 hr instead.

Sausage, spinach and white bean casserole

SERVES 6 PREP 20 MIN COOK 6–8 HR

DAIRY FREE

1tbsp olive oil

400g Italian-style pork sausages, cut into 2–3cm slices

1tsp fennel seeds

1 red onion, chopped

2 garlic cloves, finely chopped

3tbsp tomato purée

2 carrots, sliced

3 celery sticks, chopped

2 bay leaves
