APPLE & ALMOND GALETTE

PREP15 MINCOOK20 MINSERVES4 ✔ VEGETARIAN

Plain flour, to dust

½ x 320g Jus-Rol Light Puff Pastry Sheet

20g ground almonds

2 large apples, cored and thinly sliced lengthways

25g light brown sugar

Pinch ground nutmeg or cinnamon, to sprinkle

170g pot fat-free Greek yogurt, to serve

Apple & almond galette

1 Heat the oven to 200°C/fan 180°C/ gas 6. Line a large baking tray with baking paper.

2 On a lightly floured surface, roll out the pastry into a rough 25cm square. Lay the pastry on the tray and sprinkle with the ground almonds.

3 Arrange the apple slices in neat rows over the almonds, leaving a 1½cm border. Sprinkle with the sugar and a little nutmeg or cinnamon.

4 Bake the galette for 20 min or until golden. Cut into 4 squares and serve warm with dollops of yogurt.

APPLE PARCELS

Using filo pastry instead of puff, layer up 3 sheets, spritzing with spray oil as you go. Cut into 4 squares. Spoon the apples and sugar into the centre of each, then top with chopped hazelnuts and sultanas. Enclose the filling by twisting the filo at the top to make ‘money bags’. Spritz with oil and bake until golden.

FRUITY TWIST

Replace the apples with thinly sliced ripe peaches and add a handful of blueberries, raspberries or blackberries.
