How can I be vegan on a budget?

Trendy restaurants might be charging as much for cauliflower steak as the traditional kind, but it is definitely possible to be vegan on a teeny budget, says the original £1 chef, Miguel Barclay

I’m not vegan, but like many people, I’ve been incorporating more vegan meals into my weekly routine. I feel so much healthier and have loads more energy as a result. There is no doubt that a vegan diet can have huge beneits for your body.

As vegan food becomes more mainstream, the demand for simple vegan recipes is increasing. Many people feel there is a barrier to vegan cooking: they are intimidated by mysterious ingredients and confused by complicated techniques and trends they see online. There is also a misconception that vegan food has to be expensive. So I totally get why people may be put of and feel like a vegan diet is out of their grasp. Despite me saying all this, you may still be wondering if it is really possible to eat a vegan diet on a £1 budget. Even I wondered if it was possible, which is why I wrote Vegan One Pound Meals. I’ve absolutely loved the challenge and can’t wait for you to get stuck into the recipes. Not only are they incredibly good for you, but they are quick to make, they taste delicious and I hope that some of them become your go-to favourites!
