Fact: most kids need to eat more fruit and vegetables. But it turns out the best way to get them to do so probably isn’t by hiding them in cakes and sauces, or making the teatime favourites of broccoli trees and veggie faces. In the US, the Healthy, Hunger- Free Kids Act has encouraged schools to take up the Farm to School scheme. This encourages three strands: serving locally procured fruit and veg in canteens; hands-on activities like school gardens; and integrated nutritional activities. Researchers calculated how much food children threw in the bin after lunch to work out how much they ate, and found that students at schools with a Farm to School scheme ate 37 per cent more veg – mainly raw vegetables, including leafy greens, cucumbers and peppers – and 11 per cent more fruit (things like strawberries and blueberries). That’s what we call an education – and an approach everyone can copy with as little as a windowsill herb garden.
