‘KURI’ SQUASH
I read with interest the article on red ‘Kuri’ squash in the KG December 2017 issue. One thing I would like to add is that these wonderful squashes do not need peeling! I too got my seeds in the same manner but with advice from a friend that the whole squash, minus the seeds, can be used. It made the best soup ever and the skins dissolved when I puréed the flesh. I saved the seeds and will be growing these again this year.
