No matter what, Parisians will never lose their joie de vivre. They won’t let anything stand in the way of their everyday pleasures, and nor should you. Paris was where my great love affair with food began, but my relationship with the city got off to a rocky start. I frst visited on a school trip, aged 18, and found it unfriendly. I was baffed by the language: I’d order potatoes and end up with apples. Even when I later moved here to study pastry at the Cordon Bleu, it took me two years to really fall for it. Initially I was broke and friendless, but the city has a romance that’s diffcult to resist.

During my eight years here I realised that to get the most out of the city you must treat it not like a visitor, but like a Parisian. Plan every meal, so you don’t waste a mouthful on something mediocre. And once you’re sat at a table somewhere special, savour every moment; take your time and watch the world go by. When people think of Paris they think of big things – the Eiffel Tower, the Louvre – but it’s the small details that the city does so well: the signage on a shop window, or the fattering light that makes everything and everyone look that bit more beautiful.

DU PAIN ET DES IDÉES

There’s no better bakery in Paris. Their pain des amis (friends’ bread) is the loaf everyone used to buy before the baguette took over completely. Made with a starter, this type of bread keeps better, too: I once did a pop-up restaurant in London and schlepped all the bread for it back on the Eurostar. Everyone in the city knows this bakery is the best; each morning you’ll see queues snaking around the block as people wait for their morning croissant.
