FROM FOOD TRUCK TO KITCHEN

Wes Meurrens used to work in advertising. Tired of the corporate life, he left his job 13 years ago and decided to make waffles instead. He started out under an umbrella at a shabby table stand, then upgraded to an old Mercedes truck, selling more than 30 kinds of seasonal waffle, from summery lemon to wintertime ginger. His following grew so swiftly that he soon acquired a second and third truck (the original is about to be retired). Wafeitjes van ons Bomma means 'Little waffles from our granny' in Flemish, and it just so happens that Wes' grandma did play a pivotal role in the story: she lived next door when he was growing up, and would sell bread and pastries at the local market. She spent years teaching young Wes how to make pancakes, cakes... and waffles. This recipe is for lemon waffles with blueberries and mascarpone cream.
