With Easter fast approaching it began to rather consume my mind from a foodie perspective. I had never done a plant based family meal and had actually gone to a huge amount of effort to avoid one. At Christmas the family voted for a last traditional Christmas lunch, so I didn’t have to do anything differently there either. However, now we had made more of a commitment to being plant based, I really wanted to pull out the stops for the family like I would have normally done when creating a meat centrepiece. But this time I need to create a spectacular gluten-free, dairy-free and totally plant based feast for our family gathering lunch that we can all enjoy together.
When it comes to lunch, there is something so homely about a Sunday roast and a family gathering. I want to ensure that my vegan roast is no exception. This stunning masterpiece will simply not fail to really impress. It is the recipe that my children like to help make, chopping onions, gathering items from around the kitchen, rinsing the spinach, lots of mixing, layering the final glorious masterpiece and, at the end, decorating the pastry covering.
