350g strawberries, chopped into small chunks
Finely grated zest of ½ small orange
1 level tbsp orange liqueur, such as Cointreau
3 level tbsp sweetener granules
100g ricotta cheese
300g plain quark
½ tsp ground cinnamon
4 amaretti biscuits
1 Put the strawberries in a bowl with the orange zest, orange liqueur and 1 level tbsp sweetener. Stir together gently and set aside.
2 Mix the ricotta, quark, cinnamon and remaining sweetener together in another bowl. Put the amaretti biscuits into a sealable food bag and bash with a rolling pin.
3 Divide half of the strawberry mixture between 4 glass tumblers. Divide over most of the ricotta mixture, then the remaining strawberries, followed by the remaining ricotta mixture. Top each with a quarter of the crushed amaretti.
