500ml-1 litre (18-35floz) vegetable oil, for deep frying
2 red onions
6cm (2¼in) piece of fresh ginger
1 fresh red chilli 20g (¾oz) fresh coriander leaves
1½ tsp coriander seeds
1½ tsp cumin seeds 300g (10½oz) gram flour
1½ tsp garam masala 200ml (7floz) water
TO SERVE
6 good-quality burger buns
3 tbsp vegan mayonnaise ¼ of a small cucumber
1 large tomato
