Omelette with smoky garlic mushrooms

2 spring onions

1 tbsp olive oil

125g (4½oz) mushrooms

½ a green pepper

½ a red pepper

1 fat garlic clove, crushed

½ tsp smoked paprika salt and pepper chives or parsley, snipped with scissors

FOR THE OMELETTE

175g (6oz) firm silken tofu

– ½ a pack of most brands

2 tbsp nutritional yeast flakes

4 tbsp chickpea flour (gram/besan flour)

1½ tsp cornflour or arrowroot
