Spiced apple pie oatmeal

FOR THE OATMEAL
150g (5¼oz) oats (or gluten-free oats)
350ml (12floz) almond milk
350ml (12floz) water
3 tbsp chia seeds
3 star anise
½ tsp ground ginger
2 tsp ground cinnamon
115ml (4floz) apple sauce (or grated apple)
FOR THE TOPPINGS
1 apple, finely chopped
1 tsp ground cinnamon
2 tbsp water
60g (2oz) granola
60ml (2floz) maple syrup
1 Add all the oatmeal ingredients to a saucepan and bring to a boil. Turn down to a gentle simmer and cook for 5-10 minutes, until thick. If you are preparing the night before, add the ingredients to a large jar or bowl and set aside in the fridge. Cook in the morning, or enjoy cold.
2 To prepare the sautéed apples, add the apples, cinnamon and water to a small frying pan. Heat over a low heat for 5 minutes, stirring gently.
3 Remove the star anise and add the oatmeal to a blender and process for 1 minute until smooth. Top with granola, sautéed apples and maple syrup.

75g (2¾oz) chickpea flour
2 tsp baking powder
40g (1½oz) coconut sugar
25g (1oz) coconut flakes
350ml (12floz) coconut milk
1 ripe banana, mashed
1 tsp ground cinnamon
½ tsp turmeric
3 tbsp coconut oil, melted
FOR THE TOPPINGS
½ a pineapple, grilled
100g (3½oz) tropical fruit – I used passion fruit, physalis and blueberries
