The wedding cake has a long and noble history, but don’t let tradition hold you back on your big day. Edd Kimber, original champion of The Great British Bake Off, shares his recipe for a showstopping macaron tower that’s a feast for the eyes as well as the stomach, and can be easily customised

A macaron tower is about a million miles away from a traditional white wedding cake, yet can be just as – if not more – impressive. Making ityourself allows you to get creative with the colours and flavours, and will make it much more personal (plus, just think of the compliments!). This recipe will take time, but you can make the macaronsin advance and then assemble them on the day. I’ve provided a simple dark chocolate ganache recipe for the filling, as well as a passion fruit milk chocolate ganache, but choose a flavour you both love and make the tower the way you want it foryour special day.
