Bajan fish cakes
YOU WILL NEED
• 300g salt fish (dry salted cod) • 125g plain flour • 2 tsp baking powder • 4 spring onions, chopped • 1 tsp fresh thyme leaves, chopped • 2 cloves garlic, crushed • 2 green chillies, deseeded and finely chopped • ½ tsp cayenne pepper • 1 tsp black pepper • 1 large potato, diced and boiled until tender • 1 egg • 100ml-125ml water • vegetable oil, for frying
