After the chaos and extravagance of Christmas, January feels like a breath of fresh, albeit frosty, air – a much-needed excuse to stay home and retreat from things a little. It might not be the most exciting month of the year for fresh produce but that means I rely on my storecupboard that bit more, which is no bad thing. I love a new year cupboard clear-out, and in turn it means I get to feast on homely, comforting meals, unfussy one-pot wonders that are the edible equivalent of curling up on the sofa with a blanket.

I’ve learned never to start a diet in January. It’s far too cold to be eating salad. Even so, I do find I crave simpler, less rich dishes like the ones I’m sharing with you here. Soups, stews… Dishes I can cook one day, knowing any leftovers will taste even better the next day. The congee is one of my go-to recipes when the weather gets colder. It’s hearty, wholesome and packed with flavour. December, you were fun, but staying in and cooking nourishing, soulful meals is a welcome antidote.
