PICK ONE Dinner : Amanda’s ideas


Heat 1tsp olive oil in a pan. Cook ½ onion and 1 celery stick, both diced, for 10 min. Add 200g canned black-eyed beans, drained, 200g canned tomatoes and a splash of tabasco. Simmer for 10 min, then stir in a handful of chopped fresh coriander. Serve with a warmed wholegrain tortilla wrap


Put a good handful of salad leaves in a bowl with 4 halved cherry tomatoes and 10g pine nuts. Top with a 125g lean steak cooked to your liking and cut into strips. Drizzle with 15g pesto mixed with a little hot water to make a dressing, then sprinkle over 10g parmesan shavings. Serve with 200g boiled baby potatoes
