From this spring, fish going about their business of Norway’s southern coast will discover an unusual attraction: a tank full of humans sitting down to dinner. The restaurant Under (which means both ‘under’ and ‘wonder’ in Norwegian) is submerged five metres beneath the surface of the Skagerrak. The design is by Snøhetta, the same firm behind the much-praised Oslo Opera House, and the menu promises to hold close to the flinty landscape in the best New Nordic tradition
