Traditionally made with beef, this heady, aromatic rice dish can easily be made plantbased by using your favourite vegan protein instead. We have used store bought stir fry strips here, but tofu, chickpeas or tempeh all work well in this recipe.
• 1 tbsp coconut oil
• 1 large onion, peeled and finely chopped
• 400g vegan stir fry strips (we used Fry’s)
• 4 cloves garlic, peeled and finely chopped
• 1 inch piece fresh ginger, peeled and grated
