I don’t know about you, but when I first went vegan I struggled to find the time to cook healthy meals from scratch every night. Juggling work, family, social events and food shopping often leaves little time to lovingly prepare an amazing vegan meal. So with that in mind, we’ve focused this issue on easy 30-minute recipes (p10) that you can throw together in no time at all.
Another thing that I found difficult was cooking meals for my half vegan, half flexitarian family. Luckily, I now only cook vegan meals – which they’ve learnt to love – but it took quite a lot of trial and error! If this sounds like you, turn to p17 for some helpful tips.
