Good-morning muffins: fry 2 diced mushrooms in low-calorie cooking spray until golden, then stir through 1 sliced spring onion and a little diced canned lean ham (visible fat removed). Spoon into 2 muffin holes in a non-stick muffin tin, pour over 2 large seasoned beaten eggs, then bake at 200°C/180°C fan/gas 6 for 20-25 minutes, or until the egg is cooked through. Eat now, or wrap in foil for an on-the-go brekkie
