Hushpuppy phish fillet sandwich

I didn’t frequent fast food fish restaurants before I went vegan, but when I did pay a visit to one chain in particular, I could shovel their scrumptious hushpuppies down my food trap like I was trying to win a contest! This sandwich is a combo of the popular fish fillet sandwich and the beloved hushpuppy patty. Enjoy them together, but there’s no shame in a simple hushpuppy sandwich either! To keep everything warm and crispy, make the hushpuppies first and place in a 93°C/Gas Mark ½ oven while you work on the phish, then build that sandwich to epic heights!

425g (15oz) tin of chickpeas, drained and rinsed 105g (3¾oz) stone-ground cornmeal or polenta 64g (2¼oz) plain flour 80g (3oz) onion, minced 90ml (3¼floz) unsweetened soy or almond milk 2 garlic cloves, minced 2 tsp baking powder 1 tsp sea salt rapeseed oil


4 vegan sesame-topped hamburger buns, toasted 60g (2oz) ketchup 60g (2oz) vegan tartar sauce micro greens or rocket
