3 ways with... sweet potatoes
• To make a sweet and spicy jam, peel the sweet potatoes, cover with water and boil until soft. drain and mash then weigh the potatoes. Place in a heavy-bottomed pan with an equal weight of sugar. Gently bring to the boil, add grated fresh ginger to taste, reduce the heat and simmer for at least 10 minutes. Pour the hot jam into hot sterilised jars and leave to cool.
