Lighter bites
A Buddha bowl is a colourful dish of raw and cooked veggies, including greens, beans, grains, seeds and a pickled or fermented item, with an insanely delicious creamy dressing. And that’s exactly what this is, except we’ve used a lighter turmeric-spiced cauliflower ‘rice’ as a grain replacement, and added seared tofu steaks for extra protein. The pickled red cabbage is very easy, and goes with just about anything. For maximum taste, make it a day ahead. It adds a tangy zing, and brings all the yumminess together for a bowl of pure food bliss.
