I know all too well the dramas of staying up until 2am making a birthday cake needed for the following day. I was adamant that if the cake wasn’t baked, decorated and finished all within 24 hours of being eaten, then it would be stale. It took me a long time to realise this wasn’t the case.

Over the years, I developed what I now refer to as my ‘Cake Timeline’. It made my life so much easier, less stressful and I managed to get more done. Let me take you through my normal baking week. (Note, this timeline isn’t suitable for cupcakes. I wouldn’t recommend baking cupcakes longer than 2-3 days before you need them).

Firstly, lets discuss the recipe. This timeline only works for a strong, durable cake like a Madeira. For softer cakes, like a Victoria sponge or a carrot cake, you would need to adjust slightly, but it still doesn’t mean you need to be awake until the early hours.
