ROASTED ROOT VEGETABLE Grain Bowls

This comforting winter meal is sure to warm the belly as autumn days turn toward winter. Here, roasted winter vegetables are paired with hearty whole grains. Buckwheat groats, or kasha, are used, but feel free to substitute your favorite grain such as wheat berries or wild rice.

A dressing of olive oil and sage with a touch of maple syrup gives the meal even more seasonal flavor. It’s topped with a soft or hard-boiled egg making it ideal for breakfast, lunch or dinner.
