When I think about Easter, one word springs to mind: lightness. Chunky knit jumpers are packed away and replaced with thin jackets, light triumphs over darkness as the days get longer, and heavily spiced, rich bakes are replaced with delicately fruited concoctions. I love the traditions behind our favourite Easter treats, with their decorations relecting the life of Jesus, and I’ve updated my versions with a breath of fresh air and innovation. I’ve put my own twist on a classic simnel cake by making individual ones and adding amaretto-soaked cherries to the mixture – the fruit pairs perfectly with marzipan. Easter is all about celebrating with family, so I couldn’t forgo a double-chocolate centrepiece moment as it’s something everyone will love… And inally a few nest-shaped macaroons to remind you of childhood. May your Easter be light-illed and delicious!

Is it possible to have too much chocolate at Easter? The answer is no, which is why this cake is made with white, dark, cocoa powder – and mini eggs! I used kataii pastry to create a wispy, crunchy nest. You can use shredded wheat cereal instead, but the finished efect will be slightly diferent.

The assembled, iced cake will keep for 3-4 days in an airtight container.

FOOD TEAM’S TIP
If the buttercream looks as if it might split (step 4), stop adding the chocolate and chill the mixture. Once chilled, beat in a splash of boiling water to bring the buttercream back together.
