PISTACHIO CRUSTED GOAT’S CHEESE
Heat the oven to 180°C/160°C fan/ gas 4. Toast a large handful of pistachios in a baking tray in the oven for 10 minutes or until turning golden. Cool, then finely chop along with 1 tbsp dried cranberries. Tip the mixture onto a plate, then roll a 150g log of soft rindless goat’s cheese in it to coat. Serve as part of a cheeseboard.
