I spend a lot of time in New York City and absolutely love visiting the Italian restaurants out there – they serve amazing food while being buzzy and super casual. They inspired me to open our first Italian restaurant Hai Cenato in 2017. When it comes to pizza, the ingredients are the star of the show, so use the best quality and don’t load on too much – the fennel sausage is balanced by the creamy cheese with the herby gremolata cutting through the richness.
