”Capture that holiday vibe”

Feeling the need to escape to warmer, sunnier climes? If empty pockets and a full diary are keeping you from venturing to remote shores, the far-flung flavours in these recipes from our regular writer Georgina Hayden are the next best thing to being there

In my younger years (that is, when I had zero commitments and ties) I would run away to warmer climes in the chillier months. The cold feels never-ending, the days only marginally lighter, and I start to crave the sunshine. March was typically one of my favourite months to travel, and I’d go as far away as my pockets would allow me. It’s not so easy to jump ship now, but by spicing up my cooking I feel I’m bringing a touch of that warmth to my home.

Our table is set with a mixture of hearty curries and refreshing salads, as well as some more familiar classics spiced up to boost the mood. My crab and papaya salad is surprisingly addictive and the dressing versatile. My roast chicken gado gado is a twist on an already much adored meal – the classic Sunday roast – but the spice gives it a new lease of life.

I’ve also included two of my favourite cakes for that all-important afternoon sugar hit. My comforting carrot cake is laced with all those addictive spices you find in Indian sweets (my achilles heel). And for something a little different: lapis legit.

It’s an impressive layer cake that looks complex but is soothing to make and goes darned well with a good cup of coffee.
