Chicken and quinoa loaf


2tsp reduced-salt, gluten-free chicken stock powder

225g quinoa

1tbsp sunflower oil

1 small red onion, sliced

2 garlic cloves, finely chopped

1tbsp tomato purée

½ x 25g bunch fresh basil, leaves torn, plus extra sprigs to garnish

50g sun-dried tomatoes, chopped

250g skinless cooked chicken breast, diced

25g pine nuts, lightly toasted

2 eggs

40g parmesan, grated

200g frozen spinach, thawed and squeezed dry
