Spicy lemon corn

PREP 10 MIN COOK 15 MIN SERVES 4 (AS A SIDE) GLUTEN FREE DAIRY FREE VEGAN

1 green chilli, deseeded and finely chopped 1 garlic clove, finely chopped 1tbsp finely chopped fresh coriander Zest 1 lemon, plus 1tbsp juice 1tbsp olive oil Spray olive oil 4 corn cobs, husks and silks removed Lemon wedges, to serve

1 In a small bowl, combine the chilli, garlic, coriander, lemon zest and juice and olive oil. Cut 4 x 30cm pieces of foil and lightly spray each with oil. Brush three-quarters of the chilli mixture evenly over the corn cobs and wrap each one in a piece of foil.

2 Heat the barbecue (or a griddle pan) to high. Cook the corn for 12–15 min, turning, until lightly charred and tender. Serve the corn brushed with the remaining chilli mixture and the lemon wedges to squeeze over
