SPINACH FRENCH TOAST 398kcal

Blend 1 egg with 2tbsp skimmed milk, 80g baby spinach and ground black pepper. Dip 2 slices of bread in the mixture to coat. Heat a pan sprayed with oil and fry the toast for 3 min on one side. Pour over any remaining egg mix and turn to cook on the other side. Finish with a fruit salad of 160g melon and 80g grapes
