Mediterranean couscous with chorizo, avocado and onion salad

INGREDIENTS
✳8 small chorizo sausages
✳2 tbsp olive oil
FOR THE COUSCOUS
✳160g couscous✳500ml hot vegetable stock✳1 green pepper, diced✳1 orange pepper, diced✳1 red pepper, diced✳80g Kalamata olives, pitted and sliced✳60g feta, crumbled✳½ lemon, juiced✳2 tbsp extra-virgin olive oil✳Salt and pepper
FOR THE SALAD
✳2 avocados, pitted and sliced✳2 tbsp lemon juice✳1 red onion, finely sliced✳80g caper berries, in brine, drained✳50g sundried tomatoes, in oil, drained
METHOD
1 Place the couscous in a large, heatproof bowl. Add the stock, stir briefly, then cover the bowl with cling film. Set aside for 10 minutes.
2 After 10 minutes, fluff the grains with a fork. Stir in the peppers, olives, crumbled feta, lemon juice, olive oil, and seasoning to taste.
3 Preheat the grill to hot. Split the chorizo sausages in half, lengthways, and brush the cut sides with olive oil. Grill for 4-5 minutes, turning once, until lightly charred. Carefully remove from the grill and set to one side.
