SIZZLING SUMMERS CHILLI BAKES

James Hillery, contestant on the Great British Bake Off 2017 and keen allotment holder, has some delicious baking ideas to use up those pungent chillies that are in abundance at the moment

Sadly this year we are without chickens, but that has freed up a spot on the allotment for our first polytunnel, which will look like a tropical jungle with all the crops we never could quite it in our home greenhouses. Every year without fail I find a spot in the greenhouse to grow a selection of chillies. While they are great to spice up dinners, I am a baker at heart, so am constantly finding ways to include chillies in my baking. Chillies are so versatile; using them in baking you can really pull out their fruity flavour and, if balanced right, can add a lovely lingering heat. Here are three of my favourite recipes.

TOP TIP

Sterilising jars – wash your jars thoroughly in hot soapy water and rinse. Place the jars in the oven on racks, not touching, and heat at 120C for 15 minutes. Remove from the oven carefully and fill while still warm
