Use store cupboard ingredients, home-grown herbs and fruit to create your own unique home fragrances. They make thoughtful Christmas gifts too, says Stephanie Hafferty

During the winter months we spend more time indoors, with windows and doors tightly shut against the cold wintry weather. Freshen up musty rooms with these delicious home-made simmer pots – gorgeous chemicalfree air fresheners which lift the spirits and make your house smell like home.

Simmer pots can be made using a selection of fresh and dried herbs, fruit and spices, and are a delicious homemade, plastic free, recyclable alternative to scented candles.

I love to choose ingredients according to the mood: rosemary and pine for writing Christmas cards (rosemary has good memory enhancing properties, very handy!); lime, thyme and mint for lively freshness and spiced orange smells gorgeously of Christmas. Other combinations are good for relaxing (try lavender and vanilla pods) or infusing the air with herbs that help with seasonal colds and bugs (rosemary, thyme, eucalyptus, pine).
