Pappardelle all’Amatriciana

Serves 4
Ready in about 50 Minutes

Low-calorie cooking spray
250g lean bacon loin steaks, all visible fat removed, cut into cubes
1 onion, finely chopped
1 celery stalk, finely chopped
1 carrot, very finely chopped
2 garlic cloves, finely chopped
1 red chilli, deseeded and finely chopped
1/4 tsp dried red chilli flakes
2 x 400g cans chopped tomatoes
A small handful of fresh basil, finely chopped
Salt and freshly ground black pepper
375g dried pappardelle
30g parmesan shavings, to garnish
A salad of rocket, cucumber and spring onions, to serve
1 Spray a heavy-based pan with low-calorie cooking spray and place over a medium heat. Add the bacon loin and fry for 4-5 minutes, or until cooked through and beginning to brown. Transfer to a plate using a slotted spoon.

2 Reduce the heat to medium. Stir-fry the onion, celery and carrot for 5-6 minutes, or until softened. Stir in the garlic and fresh chilli and cook for a further minute. Add the chilli flakes, tomatoes and basil, and season. Simmer the mixture gently, stirring occasionally, for 20-25 minutes, or until thickened.

3 Meanwhile, cook the pasta according to the packet instructions. Drain well and return to the pan.

4 Add the bacon to the pasta and pour over the sauce. Gently toss, then season well. Garnish with the parmesan shavings and serve with the salad.
