There are all kinds of pumpkins. We most often encounter the Hokkaido pumpkin, which has the typical orange color and one of its great advantages is that it need not be peeled – when cooked, its peel softens and can be eaten without issue. Another well-known pumpkin is butternut squash, which is light-green and has a pear-like shape. What is great about it is that it has very few seeds and lots of pith, so you basically won’t throw anything away, save for the peel.
