Toni has recently published her new book, Plant-Based on a Budget, which celebrates delicious vegan dishes that all can enjoy, for minimal cost. Featuring recipes from Zucchini Potato Casserole and Coconut Curry Soup, to Tropical Smoothie Bowls and Peanut Butter Balls, Toni incorporates her Mexican-American heritage with healthy, nutritious meals. We caught up with Toni to find out where her passion for affordable vegan food came from, what we can expect from Plant-Based on a Budget and her future plans.
