1 AUBERGINE PIZZA CANAPéS
Preheat oven to 200° (400°F). Using a little bit of vegetable, olive or nut oil lightly grease a baking tray. Now, cut the aubergine into thick round slices and place them well spread on the oiled baking tray. On top of each slice add a couple of tbsp of marinara, followed by a sprinkle of your favourite vegan cheese. If you would like more of a seasoning or spice, Italian herbs give it a bit more of a pizzeria flavour. Pop in the oven for 10-15 minutes so the aubergine cooks and the cheese melts to a stringy consistency. Remove from the oven and garnish with basil and watercress.
