• Olive oil
• 2 red onions, peeled and each cut into 8 wedges
• 3 red or yellow peppers, deseeded and sliced
For the sweet potato tart base:
• 1 small sweet potato, peeled
• 150g (1 cup) spelt flour, plus extra for dusting
• 150g (1 cup) whole-wheat flour
• 60ml (¼ cup) olive oil
