BEETROOT in focus
First cultivated by the Romans, beetroot or ‘beet’ varieties have soared in popularity since, thanks to their earthy charm and vivacious, vibrantly-coloured interiors. Though there are various types of beetroot – some of which are actually yellow or white in colour – the punky, purple vegetable is the most commonly seen in the kitchen.
